Use Antiqua Madre is a powdered natural yeast, and it represents a valid alternative to sourdough. It is obtained from the drying of the third refreshment of a dough based on Antiqua Type 2. Used at 4% in the recipe, it confers acidity to the dough, ensuring greater stability during leavening, better development of the finished product, more aromas and a longer lasting fragrance.
